Ingredients

Fish
  • 4 mahi mahi fillets 6 oz each
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • 1 lime cut into wedges
Mango Salsa
  • 2 ripe mangoes diced
  • 1/2 red bell pepper diced
  • 1/4 small red onion finely diced
  • 1 small jalapeño seeded and minced
  • 1/4 cup fresh cilantro chopped
  • Juice of 1 lime
  • 1/4 tsp salt

Method

  1. Preheat oven to 400°F. Line a baking sheet with parchment paper.
  2. Make the salsa: In a bowl, combine diced mangoes, red bell pepper, red onion, jalapeño, cilantro, lime juice, and 1/4 tsp salt. Toss well and set aside.
  3. Pat the mahi mahi fillets dry with paper towels. Rub both sides with olive oil.
  4. Season the fillets with 1 tsp salt, black pepper, cumin, and chili powder.
  5. Place the fillets on the prepared baking sheet. Bake for 12-15 minutes, until the fish is opaque and flakes easily with a fork (145°F internally).
  6. Top each fillet with mango salsa and serve with lime wedges.
